Ingredients

For the Dough:- Make Falahari Paratha

• 1 Cup Buckwheat Flour (Kuttu ka Atta)
• 1 Cup Potato Flour (or Mashed Boiled Potatoes)
• Water (As Needed)
• Salt (To Taste)

For the Filling (optional):- Make Falahari Paratha

• 1 Cup Grated Paneer (Cottage Cheese)
• 1-2 Green Chilies, Finely Chopped
• 1 Teaspoon Cumin Seeds
• 1 Tablespoon Coriander Leaves, Chopped
• Salt (To Taste)

Instructions, Make Falahari Paratha

Step 1:- Prepare the Dough

1. In a bowl, combine buckwheat flour, potato flour, and salt.
2. Gradually add water and knead to form a soft dough. The dough should be pliable but not sticky. Cover it with a damp cloth and let it rest for 15-20 minutes.

Step 2:- Prepare the Filling (if using)

1. In a bowl, mix grated paneer, green chilies, cumin seeds, coriander leaves, and salt. Combine well.

Step 3:- Make the Parathas, Make Falahari Paratha

1. Divide the dough into equal-sized balls.
2. Take one dough ball and flatten it slightly. If using a filling, roll it out into a small circle (about 4-5 inches in diameter) and place a tablespoon of filling in the center.
3. Bring the edges of the dough together to enclose the filling and pinch to seal.
4. Gently flatten the stuffed dough ball and roll it out into a circle (about 7-8 inches in diameter) with a rolling pin, dusting with flour as needed.

Step 4:- Cook the Parathas, Make Falahari Paratha

1. Heat a tava (griddle) or non-stick skillet over medium heat.
2. Once hot, place the rolled paratha on it. Cook for about 1-2 minutes until small bubbles form.
3. Flip it over and cook for another 1-2 minutes. Brush with ghee or oil and flip again, cooking until golden brown and crisp.
4. Repeat with the remaining dough and filling.

Step 5:- Serve

Serve hot with yogurt, mint chutney, or simply enjoy it on its own.

आटे के लिए:-

• 1 कप कुट्टू का आटा

• पानी (आवश्यकतानुसार)
• नमक (स्वादानुसार)

भरने के लिए (वैकल्पिक):-

• 1 कप कसा हुआ पनीर (पनीर)
• 1-2 हरी मिर्च, बारीक कटी हुई
• 1 चम्मच जीरा
• 1 बड़ा चम्मच धनिया पत्ता, कटा हुआ
• नमक (स्वादानुसार)

निर्देश

चरण 1:- आटा तैयार करें, Make Falahari Paratha

• एक कटोरे में कुट्टू का आटा, आलू का आटा और नमक मिलाएँ।
• धीरे-धीरे पानी डालें और नरम आटा गूंथ लें। आटा लचीला होना चाहिए लेकिन चिपचिपा नहीं होना चाहिए। इसे गीले कपड़े से ढककर 15-20 मिनट के लिए रख दें।

चरण 2:- भरावन तैयार करें (यदि उपयोग कर रहे हैं)

• एक कटोरे में कद्दूकस किया हुआ पनीर, हरी मिर्च, जीरा, धनिया पत्ती और नमक मिलाएँ। अच्छी तरह मिलाएँ।

चरण 3:- पराठे बनाएँ

• आटे को बराबर आकार की लोइयों में बाँट लें।
• एक लोई लें और उसे थोड़ा चपटा करें। यदि भरावन का उपयोग कर रहे हैं, तो इसे एक छोटे गोले (लगभग 4-5 इंच व्यास) में बेल लें और बीच में एक बड़ा चम्मच भरावन रखें।
• आटे के किनारों को एक साथ लाकर भरावन को बंद करें और चुटकी से बंद करें।
• भरे हुए आटे की लोई को धीरे से चपटा करें और बेलन की सहायता से इसे गोल आकार (लगभग 7-8 इंच व्यास) में बेल लें, आवश्यकतानुसार आटा छिड़कें।

चरण 4:- पराठे पकाएँ

• मध्यम आँच पर एक तवा या नॉन-स्टिक कड़ाही गरम करें।
• गरम होने पर, उस पर रोल किया हुआ पराठा रखें। छोटे बुलबुले बनने तक लगभग 1-2 मिनट तक पकाएँ।
• इसे पलटें और 1-2 मिनट तक पकाएँ। घी या तेल लगाएँ और फिर से पलटें, सुनहरा भूरा और कुरकुरा होने तक पकाएँ।
• बचे हुए आटे और भरावन के साथ भी यही दोहराएँ।

चरण 5:- परोसें

• दही, पुदीने की चटनी के साथ गरमागरम परोसें या बस इसे ऐसे ही खाएँ।
