Gajar Ka Halwa is a Delightful Dessert Perfect for Diwali. Here’s a Simple Recipe to Make it Special.

Ingredients:-

Carrots:- 1 kg (Preferably Red Carrots)
Milk:-1 Liter (Full-Fat For Creaminess)
Sugar:- 200-250 Grams (Adjust to Taste)
Ghee:- 4-5 Tablespoons
Cardamom powder:- 1 Teaspoon
Chopped nuts:- ¼ Cup (Cashews, Almonds, and Pistachios)
Raisins:- 2 Tablespoons
Khoya:- 100 Grams (Optional, For Richness)

Instructions:- Gajar Ka Halwa

Prepare the Carrots:-

Grate the carrots using a grater or food processor.

2. Cook the Carrots:-

In a heavy-bottomed pan, heat 2 tablespoons of ghee.
Add the grated carrots and sauté for about 5-7 minutes until they soften.

3. Add Milk:-

Pour in the milk and bring it to a boil. Reduce the heat and let it simmer, stirring occasionally, until the milk reduces and thickens (about 30-40 minutes).

4. Sweeten the Halwa:-

Once the milk is reduced, add sugar and mix well. Continue to cook for another 10-15 minutes until the sugar dissolves and the mixture thickens further.

5. Flavor It:-

Add cardamom powder, khoya (if using), and mix well.

6. Finish with Nuts and Ghee:-

In a separate small pan, heat the remaining ghee and fry the chopped nuts and raisins until golden. Add them to the halwa and mix.

7. Serve:-

Serve warm, garnished with additional nuts. You can also serve it with a scoop of vanilla ice cream for an extra treat!

Tips:-

Use fresh, juicy carrots for the best flavor.
For a richer taste, increase the amount of ghee or khoya.
You can prepare it a day in advance and reheat it before serving.

गाजर तैयार करें:-

गाजर को कद्दूकस या फ़ूड प्रोसेसर का उपयोग करके कद्दूकस कर लें।

गाजर पकाएँ:-

एक भारी तले वाले पैन में 2 बड़े चम्मच घी गरम करें।
कद्दूकस की हुई गाजर डालें और उन्हें नरम होने तक लगभग 5-7 मिनट तक भूनें।

दूध डालें:-

दूध डालें और उबाल आने दें। आँच कम करें और इसे बीच-बीच में हिलाते हुए तब तक पकने दें जब तक कि दूध कम होकर गाढ़ा न हो जाए (लगभग 30-40 मिनट)।

हलवे को मीठा करें:-

दूध कम हो जाने पर, चीनी डालें और अच्छी तरह मिलाएँ। चीनी के घुलने और मिश्रण के और गाढ़ा होने तक इसे 10-15 मिनट तक पकाते रहें।

इसका स्वाद बढ़ाएँ:-

इलायची पाउडर, खोया (अगर इस्तेमाल कर रहे हैं) डालें और अच्छी तरह मिलाएँ।

मेवे और घी डालकर खत्म करें:-

एक अलग छोटे पैन में, बचा हुआ घी गरम करें और कटे हुए मेवे और किशमिश को सुनहरा होने तक भूनें। उन्हें हलवे में डालें और मिलाएँ।

सर्व करें:-

इसे गरमागरम परोसें, ऊपर से मेवे डालकर सजाएँ। आप इसे एक स्कूप वेनिला आइसक्रीम के साथ भी परोस सकते हैं!
